Doc: add diagrams and remove deprecated AI Summit stuff

As AI Summit is over, clarify roadmap + how to contribute

Make main README and detectors' README more maintainable (roadmap -> milestone, doc as code in detector.py files)

Add diagram to give an overview of the repo and its modular logic (eg mermaid)
